This is a guacamole with which I have always had a lot of success, and it has followed me from book to book.

Ingredients

  • 1 tablespoon kosher salt
  • 5 medium cloves garlic, smashed and peeled

Method

Sprinkle the salt over the garlic cloves and mince very fine, pressing them into the salt with the flat of the knife from time to time until they form a paste.
