All gluten-free pastas will take different amounts of time to cook, depending on the flours used and the sizes and shapes of the noodles. The table on the opposite page summarizes the results of my tests of various pastas from numerous companies, including Schär, De Boles, Ancient Harvest, and Lundberg. If a company is not mentioned, it means the quality proved inconclusive.
