Gazpacho

Name: Gazpacho
Ingredients: ½ cup light-flavored olive oil; 1 cup tomato juice, plus more if desired; 1 tablespoon kosher salt, or to taste; ¾ teaspoon chili powder; 2 small green bell peppers, cored, seeded, deribbed, and cut into eighths; 1½ firm medium cucumbers, peeled and cut into chunks; 5 cloves garlic, smashed and peeled; 6 medium to large ripe tomatoes, cored, peeled, and cut into eighths; ½ medium Bermuda or other sweet white onion, quartered; ½ medium Bermuda or other sweet white onion, quartered
