I have always found it tedious to scrape the fibrous and seedy interiors out of acorn squash before cooking them. Fortunately, I have found the answer: use a melon baller or, even better, a squash corer such as is used for zucchini. This will encourage the making of the traditional squash purée, which can then be the basis for this delightful soup. This soup isn’t too rich to go before a turkey dinner.
