The reddish Hawaiian papayas now on the market make this sorbet particularly attractive.

Ingredients

  • 2 medium papayas, peeled, seeded, and cut into chunks
  • 1 cup Simple Syrup
  • Juice of

Method

Purée the papaya in a food processor until smooth. There should be about cups purée. Add the syrup and lime juice.

Finish in a sorbet machine or use one of the methods.
