This is the ultimate adaptable sauce. Thin it out with a tablespoon or so of water and heat slightly for a reasonable hollandaise sauce substitute. Add fresh herbs and chopped cooked spinach for a green sauce. Add capers, chopped onion, chopped parsley, and chopped gherkins for tartar sauce. Add tomato purée for a pretty, cold sauce for fish. Add some grainy mustard or horseradish to make a spread for cold loin of pork.</
