This lively little snack from Islas contributor Brigid Washington’s childhood remains a staple in her home. Made with fresh mangoes—both green and ripe work—it comes together quickly, and like other chows is best made and eaten the same day.

Ingredients

  • 2 large unripe, firm, green-skinned mangoes, peeled, pitted, and sliced lengthwise into thick strips
  • ½ cup [120

Method

Place the mangoes in a medium nonreactive mixing bowl.

Add the lime juice, salt, garlic, pepper, and cilantro. Toss to combine using a fork and serve immediately. Mango chow keeps for several days in the refrigerator.
