Distinct from most commercially available canned or bottled ginger beers, this popular fermented beverage, typically served during the Christmas season in Jamaica, is refreshing and invigorating—and it gets even better the longer it ferments. While it can be enjoyed within 1 or 2 days, I strongly encourage you to let it sit for at least 1 week in the refrigerator, or longer if possible. It makes a huge difference. Serve over ice with a squeeze of lime if desired.
