Across the Caribbean, rice and beans are sometimes cooked together—as with Jamaican Rice and Peas—or prepared separately but served together, like several spoonfuls of beans atop white rice. I’ve been making beans for my family since I was a kid. They are one of the first dishes I learned to make, and my preparation has evolved quite a bit over time. As in many other island families, mine was heavily reliant on frozen and canned foods and premade seas
