Panellets are typical biscuits of Catalonia, Aragon, Valencia and the Balearic Islands, which are traditionally eaten over All Saints Day. They are usually prepared in the form of a ball and coated with pine nuts, but there are many other versions. This recipe is my own version of those energising biscuits, made with whole raw almonds from our farm.
