In the northern part of Ghana, moringa is one of the most commonly used vegetables for a variety of dishes, especially in the dry season when there is less produce to choose from. The leaves, which are usually used in the preparation of food or ground into powder, are rich in vitamins A, C, B2, and B6 as well as protein and essential nutrients including potassium, magnesium and iron.
