Maluns takes a lot of time to prepare, but it’s worth it. Maluns – a simple Swiss dish of buttery fried potatoes – is a very popular lunch in our house, made with ingredients that we always have at home. Maluns is best served with young alpine cheese, apple sauce and a cup of hot milky coffee.

Method

Two days before you want to make the dish, boil the potatoes whole for approximately 40 minutes in a steamer or 15 minutes in a pressure cooker. Cool and set aside.

On the day, peel the two-day-old boiled potatoes and grate them coarsely. Mix the grated potato thoroughly with the flour and a pinch of salt.
