Owing to our rich biodiversity, Bhutan is known for many types of foraging throughout the season. Some of the popular leafy herbs can be foraged right around our farm or in the nearby woods. Fish mint (both the leaves and stems) and other common mints, along with varieties of flowers, can be eaten in refreshing salads like this one.

Ingredients

  • 100 g fish mint (leaves and stems)
  • 50 g common mint leaves</

Method

Wash the fresh ingredients in clean water and then spin to dry. Chop the herbs into bite-size pieces. Lightly mash the fish mint stems for even more flavour. Massage the tree tomatoes between your palms to loosen the insides, then cut off the tops so you can squeeze out the contents into a bowl.

Add the herbs to the tomato juices and seeds in the bowl, then sprinkle with salt and pepper
