The brown beans and corn in this hearty stew complement each other in terms of protein composition. In combination, they make a great meat substitute, so no meat needs to be added to this filling and tasty meal.

Ingredients

  • 150-200 g dried brown beans (or 1 tin, drained weight 465 g)

Method

Soak the dried brown beans for 12 hours in plenty of cold water, then drain and cook in a large pan of clean water for 1 hour 30 minutes.

While the beans are cooking, prepare all the other ingredients. Rinse the potatoes and cut them into thick slices. Peel the onions and slice into half-moons, peel and finely chop the garlic, and cut the carrot and cucumber into thick slices. Finely ch
