This delicious recipe combines the freshness of Galotyri, a mild Greek soft cheese, with the sweet flavour of courgettes and a bright lemony dressing to create a unique starter or a fabulous wine pairing dish.
Cut the courgettes into thin slices (this is easier if you use a mandoline). Brush them with some of the olive oil and char under a hot grill or in a pan for 1-2 minutes on each side.
Meanwhile, mix the lemon zest, fresh onion and remaining olive oil in a bowl. Add salt and pepper to taste. Toast the bread either under the grill or in a toaster.
