Sucuk (pronounced ‘soodjook’) is a sausage of Armenian origin, redolent with cinnamon, cumin, garlic and chilli. It is commonly found on menus across the Middle East, the Balkans and Central Asia. On the streets of Istanbul, you will find sucuk sliced, fried and served with an egg and a slice of bread for a filling breakfast, or stuffed and baked into a pide for a delicious midday snack.
