You can find special ready-made spice mixes for chicken in Turkish or other Middle Eastern food shops. Otherwise, use ground allspice or quatre épices spice mix instead (see note).

  • 1 onion, grated
  • 2 tablespoons ready-made spice mix for

Method

Crush the garlic with some salt using a mortar and pestle. In a small bowl, gently mix together the garlic, onion, spice mix, a good pinch of chilli flakes (or to taste), olive oil and yoghurt. Put the chicken wings in a glass or ceramic dish, and pour over the yoghurt marinade. Cover with plastic wrap, and leave to marinate in the refrigerator overnight.
