Real shades of my Roman childhood here! These rissoles are often called Supplì al telefono in Rome, the gooey centre of melting mozzarella representing the telephone wires. They can be bought from the many tavola calda establishments which serve hot, ready-made food. I think they taste even better made from left-over Risotto. Delicious and simple, they are excellent party food as they are just made to be eaten with your fingers. You can serve them with a tomat
