This is one of my favourite ways of eating seafood, and even people who don’t like other seafood recipes normally like this one. It was given to me by Signor Balducci, the charming chef at the Hotel Riva del Sole, just outside Bari. You don’t need to limit yourself to the varieties of seafood I’ve suggested: you can use any combination you like.
