This scrumptious fresh seafood salad is another recipe from the jovial Signor Balducci, chef at the Hotel Riva del Sole near Bari. As in the recipe for grilled seafood, you can use any type of seafood you like. However, please do be sure to include squid because it gives the salad its traditional chewiness. The mussels and clams, which filter about 17 or 18 gallons of water a day, are left overnight to filter in flavoured water which gives them an especially nice taste.
