This is my own version of this classic dish. There are two stories about its origins. Some say it was created by the carbonari (the charcoal makers). As it requires very little cooking and all the ingredients are transportable, they were able to make it on an open fire. Others say that it was invented to satisfy the American allies who became fed up with spaghetti and tomato sauce and demanded ‘ham and eggs’.
