Tajarin are a Piedmontese form of tagliatelle, but slightly narrower.

This delectable recipe from the Alba province of Piedmont was cooked for me by Giorgio Rocca, who is the authority on Piedmontese food, at his restaurant Al Giardino da Felicin in Monforte d’Alba, a tiny village deep in the Langhe hills of Piedmont.
