When we visited my friend Natalizia in Puglia recently, she made orecchiette for us by hand with wholemeal flour and served them with this basic household sugo or sauce. This sauce varies from household to household and from day to day. It is a simplified version of a Bolognese sauce, i.e. a tomato and meat sauce for which any cut of meat can be used.
