This is a speciality from the rather remote and poor region of Molise, where they have for many centuries produced excellent, top quality ricotta.
Traditionally, these pasties are served with a dish of batter-coated, deep-fried foods such as cauliflower, artichokes, mozzarella. They can be served as an antipasto or as a main course with salad - although my children have them for tea!
