Fillings: Braised Peppers

Ingredients

  • 1 green, 1 yellow and 1 red pepper
  • 6 tablespoons olive oil
  • 2 cloves garlic, peeled and chopped
  • salt and pepper

Method

Slice open the peppers, remove the seeds and membranes and slice them thickly. Heat the oil in a large pan and fry the garlic for about 5 minutes or until soft and golden. Add the peppers and mix together. Season and continue to cook for about 15 minutes or until the peppers are completely soft. Spoon as much of the pepper mixture as you like into a Focaccia wedge, then heat through in the oven at gas mark 5, 375°F (190°C), for about 6 minutes.
