The noble swordfish is fished off the coasts of Sicily and Calabria and cooked in lots of different ways. One of the most simple and certainly my favourite is to marinate steaks and grill them either on a barbecue or under an ordinary grill. It’s best to marinate them as the fish is not naturally juicy and can dry out. Shark steaks can also be cooked in this way. I like to serve the finished dish with Aulivi Cunsati for a very Sicilian effect. You can also
