For this recipe you need a decent bottle of dry white wine, which is certainly not hard to find in Asti - surely everybody must have drunk Asti Spumante at least once? The dish is also an excellent way of cooking pike, if you can cope with all the bones with which, unfortunately, this fish is blessed. The traditional accompaniment is small, boiled potatoes.
