The marriage of trout and red wine is one of my favourite flavour combinations. As a member of a family of extremely keen trout fishermen, with countless Irish fishing holidays to my credit, I find that the preparation and eating of this noble fish is something that is very close to my heart. For this recipe you need one of those big, fat fish with a hearty flavour and firm texture. The recipe is from Lombardy.
