I can remember eating this as a child at my grandmother’s house. (The cook who made it for us then was Sardinian, but this dish is a speciality of Arezzo.) What I remember most vividly about meals with Grandma is that the napkins were of a size to cover a long skirt completely and when I was little they were big enough to envelop me altogether.
