Called Cotoleta in Milanese dialect, this is the dish which Vincenzo Buonassisi, one of Italy’s most famous and best loved cookery experts, cooked for me at his home in Milan. Signor Buonassisi is one of my great heroes, a legendary figure in Italian gastronomy whom I was somewhat awestruck and stunned to meet. I have always admired his wealth of knowledge and expertise from afar and was delighted to discover that he is as charming and amenable as he is knowledgeable.
