Offal features plentifully in Roman food, far more than anywhere else in Italy, which is probably why Roman cuisine has never become as famous as the cuisines of Naples or Tuscany! Offal is not everyone’s favourite food and therefore very few recipes using it have been included in this collection. One of them is this delicious kidney casserole, which has the added advantage of being very quick to make It is nice served with mashed potatoes and a green vegetable.
