There are several ways of cooking radicchio: you don’t have to save it exclusively for salads. This recipe is ideal for a quick lunch with grilled steak or chops.

  • 4 heads radicchio

Method

Wash and dry the radicchio and cut it into halves or quarters, depending upon its size. Melt the butter in a heavy pan (or, if using oil, heat it slightly) and lay the radicchio in it. Cook on either side for about 4 minutes or until just tender. If you cover the pan, the radicchio will be soft; if you leave the pan uncovered, it will be crisp - the choice is yours.
