Sicilian Olive Sauce

You need to leave this sauce to marinate for about 3 days, so be sure you have time at your disposal It is delicious with cold meats or grilled fish.


  • 14 oz (400 g) green olives, stoned and crushed
  • 2 oz (50 g) fresh dill, chopped
  • 4 cloves garlic, peeled and crushed
  • 15 leaves fresh mint
  • salt
  • 4 oz (100 g) small inner sticks celery with leaves, chopped
  • 8 tablespoons olive oil
  • 4 tablespoons red wine vinegar
  • ½ red chilli pepper, de-seeded and finely chopped


Put the olives into a bowl, add the dill, garlic, mint and a pinch of salt; cover with water and leave to soak for 3 days. Drain and add the celery, olive oil and vinegar, then the chilli. Stir it all together thoroughly and use as required.
