Tarragon has been famous for centuries for its medicinal properties and for its culinary uses. It has a delicious, bitter-sweet taste which makes it perfect for using with meats and chicken. In Siena, where this recipe comes from, it is used a lot with boiled beef. The plant is a member of the Compositae family and all parts of the herb are edible, including the stalks which are used to make delicious vinegar.
