Risotto is a wonderful dish, but it requires steady attention. That is why I love this baked rice dish from Liguria. You cook the meat, and then cook the rice directly in the meat broth in the style of a pilaf. Finally, you combine the two, transfer them to a dish, and bake the mixture as if it were a timbale, but without the usual complex layering.
