This unusual brasato is a specialty of Osteria dei Fiori in Macerata in the Marches, the region where Rosso Conero wine is produced. While grated bitter chocolate is often used to deepen dolce e forte—“sweet and strong”—dishes, in which it is paired with pine nuts, raisins, and sometimes dried fruit, here it is used in the form of cocoa powder, adding a subtle rich undertone to a red wine sauce. Serve with mashed potatoes and braised cabbage.
