The Madonie is a mountain range in northern Sicily between the towns of Cefalù and Enna. This recipe is a bit unusual for the cooks in the region, who usually prefer oregano over rosemary, and who would add peppers or mushrooms, but not both. However, after testing the recipe, I had to include it, typical or not, because it is so tasty. This recipe is also good made with shoulder meat from capretto (kid), which is cut into the same-sized pieces but cooked longer. Serve the lamb or th
