While doing research for a Sicilian-themed dinner, I came upon a reference to an old recipe in which a leg of lamb was cooked directly on curved roof tiles in a wood-burning oven. Slices of garlic, rosemary needles, and strips of pancetta rolled in black pepper were stuffed into slits cut into the leg, and the meat was basted with olive oil and lemon juice while it cooked.
