At Ristorante Le Berri in Valle Castellano in the Abruzzo, pork and apples are cooked together in a stew. It is traditionally prepared with Renette apples, which are rust-gold on the outside, similar to Golden Delicious. I have also made the dish with Gala apples, and they were wonderful. After cooking the recipe a few times as written, I made some changes because the meat was too dry. I now cook the pork covered at all times. I also mince the chile pepper so that the heat infuses the meat
