This dish is reminiscent of Venice where polenta and prawns are cooked in various different disguises though seldom together. All the same, they make a nice happy marriage.
The traditional way of cooking polenta requires almost an hour’s constant stirring; here I have used instant polenta which makes this recipe quick and easy to prepare. You can make this dish equally successfully with a combination of prawns and king prawns, as in the photograph.
