I created this risotto in Italy on the day my niece, Sophie, was getting married in England. Because I thought it was especially delicious, I decided to dedicate it to her. I sent her a fax with the recipe and good wishes for the occasion. That’s why it is called Risotto ‘Sophiesticated’.

You may find wild sorrel during your early summer outings in the county, but cultivated sorrel is available from good greengrocers and supermarkets.
