This sauce, the simplest of all the tomato sauces, is also a base for many others. In Italy it is made with ripe, sweet tomatoes in season. As well as serving it with spaghetti, you can use this sauce for topping pizzas.
Fry the onion gently in the olive oil until soft without colouring.
Add the tomatoes and simmer gently for 10 minutes. Stir in the basil and salt and pepper to taste.
