Triglie Incazzate

‘Incazzate’, like ‘arrabbiate’, means literally ‘angry’ but in cookery has come to mean hot due to the addition of chilli.

At the end of a long, hard photo shoot for this book which had lasted several days, we suddenly realized that one of the dishes was a little unphotogenic and I had only a few angry minutes to create another. The idea for this recipe came out of the heat of that moment, but don’t be put off.
