This is a peasant meal made in the country when everyone is busy and no one has time to cook! It is just thrown into the oven without a lot of care, but funnily enough it is this that gives the pefect taste to the dish. You can eat it by itself or serve it with any roasted meat.

Ingredients

  • 1 large onion, coarsely chopped
  • 750 g ( lb) waxy potatoes, peeled and cut into 5mm (¼ in) slices

Method

Preheat the oven to 240°C/475°F/Gas 9.

Put all the ingredients into a roasting pan and mix together with your hands. Bake for about 1 hour
