I like this just as it is, well chilled, but should you want to make it more special, serve it with a bowl of vanilla ice-cream or with hot chocolate sauce.
Choose a stainless steel saucepan that will hold the pears tightly upright to avoid using a lot of wine. Add the cloves, cinnamon stick, lemon zest and caster sugar and pour in the white wine to cover the pears. Cover with a lid and simmer gently for 25 minutes, turning the pears after 10 minutes.
Remove the pears from the liquor and cool. Boil and reduce the liquor by half. Gently fold
