Don’t imagine that because this recipe includes sugar that you can get away with using unripe peaches - you always get out of a dish what you put in. What you need here are large, juicy, tree-ripened peaches, such as those grown around Verona, which are ideal for this wonderful dessert.

I created this recipe to celebrate Juliette’s birthday in Verona.
