Ask your fishmonger in advance to order you some ready-peeled brown shrimps, because it will take you the best part of a day to peel enough for a dinner party by the time you’ve sampled a few. They will be expensive but worth it.

Ingredients

  • 350 g unsalted butter
  • juice of 1 lemon

Method

Melt the butter in a pan, add the lemon juice, mace, nutmeg, bay leaves and anchovy essence and simmer on a low heat for 2-3 minutes to infuse the spices. Remove the mixture from the heat and cool until it is just warm. Add the shrimps and stir well, then season with salt and pepper. Put the mixture into the fridge and stir it every so often.
