This dish can be served all year round, including various types of artichokes as they come into season. If fresh baby artichokes are not to be found, you can buy good-quality ones in jars in delicatessens and supermarkets. This recipe may look long but don’t be put off as it’s unlikely that you’ll use all of the artichoke varieties - for a dinner party, any two would be fine. If you are feeling indulgent, add a finely chopped truffle.
