The most copied dish on the menu. It came originally from Le Caprice: Chris, seated at the bar, read a recipe for fishcakes in a Sunday paper arid asked the chef to see if he could improve on it. The result was immediately popular - they didn’t realise quite how popular until they dropped it. The menu had to be reprinted. There are customers who still order nothing else.

When you make them, don’t skip the resting time in the fridge. It stops
