Bubble and squeak is traditionally made from leftover vegetables and potatoes. This version uses fresh, but frying the mixture twice gives it an authentic flavour.

Ingredients

  • 400 g swede, peeled and cut into chunks
  • good vegetable oil for frying
  • 5 medium onions, peeled and sliced

Method

Bring a saucepan of salted water to the boil, put in the swede and cook until soft. Heat 3 tbsp vegetable oil in a pan and cook the sliced onions until they are soft. Cook the cabbage until soft in boiling salted water. Cook the sprouts until soft, then slice them. Put all the cooked vegetables toge
